Spicy Skewered Scallops in Peanut Sauce 

Ingredients

 

¼ cup peanut butter

 

2 garlic cloves, minced

 

2 scallions, chopped

 

3 t. light soy sauce

 

3 t.  Rice vinegar

 

1 tsp sugar

 

½ tsp ground red pepper 



Cooking Instructions

 

Mix all the sauce ingredients in a medium glass dish.  Add scallops.  Cover and marinate in refrigerator for 15 minutes.  Remove scallops from marinade. Thread scallops on skewers.  Using basting brush, lightly coat scallops with vegetable oil and place on grill fro 2 minutes. Turn.  Grill fro about 3 more minutes
