Scallops Scampi

Ingredients

 

3 cloves of garlic

2 tblsps minced fresh parsley leaves

2 tblsps white wine

1 tlps olive oil

1/8 tsp ground black pepper

1 lb sea scallops

1 tsp cornstarch

2 tsps lemon juice

 



Cooking Instructions

 

In a 2-quart microwave dish, combine garlic, parsley, wine oil & black pepper.  Mixing well.  Add scallops and toss to blend; cover and marinate in the refrigerator for one hour.

 

Cover scallops mixture with a vented plastic food wrap and microwave on high for 2 minutes.  Stir mixture well and microwave on high for 1 to 2 minutes longer or until scallops become opaque and are cooked through.  Stir cornstarch into lemon juice and set aside.

 

With a slotted spoon transfer scallops to serving dishes.  Stir cornstarch mixture into remaining cooking liquid and microwave uncovered on high for 1 minute.  Stir briefly and microwave on high 1 to 2 minutes or until mixture thickens, to a glaze.  Spoon glaze over scallops and serve.
